Kadid Couscous

Couscous Diari vegetables and merguez

  • Kadid 
  • 2 tbsp of tomato concentrate 
  • Olive oil 
  • Garlic
  • Onion
  • Potato
  • Chickpeas and beans dipped
  • Zucchini
  • Green chilli pepper 
  • Paprika, turmeric, salt and pepper 


  • Heat the oil in the couscous maker
  • Fry the green peppers salted, then set aside
  • Clean and prepare vegetables
  • Fry the onion in the oil and add the kadid
  • Add the paprika, the turmeric and the tomato concentrate, cook for 10 mn
  • Add chickpeas and beans with salt and pepper, cook for 30 mn
  • Moisten the couscous with some water, oil and salt
  • Put it in the strainer of the couscous maker
  • Add  the vegetables in the couscous maker
  • Cook the sauce and the couscous
  • Put the couscous in a large traditional dish, add the sauce and mix
  • Decorate with fried peppers, vegetables and kadid
